Luckily, my husband had been home so I had him pull out some frozen chicken and asked him to boil it.
He did and when I got home I was able to shred it and make enchiladas. He put them in the oven while I was gone and I pulled them out when I got home. It was a great and simple meal.
Here are the helpful hints:
1.Freeze your meat in Ziploc freezer bags, with 1 piece of chicken for each person in your family (there's just my husband and me so we put two large chicken breasts in each bag and freeze them).
2. Cook your meat beforehand (we usually do this, but haven't recently), then shred it and freeze it. This makes it so much easier when you're in a hurry. All you have to do is pull out the Ziploc freezer bag with chicken and stick in the microwave for 1-2 minutes until it's thawed. Much quicker than the 20-30 minutes to boil it...
It was a quick and simple meal-and it was great because you can use garden-grown vegetables!
