We have the best place in our garden to grow tomatoes. Every year we
get TONS of tomatoes without even trying. What do we do with all of
them you might ask?
Can 'em!
Here's what you need & what to do (explained simply):
all the yummy tomatoes... |
canning utensils...I got this at Walmart for around $7 |
quart size jars and lids (you can use pint size as well) |
lemon juice (quarts-2 TBS, pints-1 TB) & salt (quarts-1 tsp, pints-1/2 tsp) |
seals - they need to be hot so I boiled them |
place clean tomatoes in boiling water for 30-60 seconds...skins should crack |
remove tomatoes from boiling water, rinse under cold water and remove skins |
fill jars, leaving 1/2" room at top, make sure to get all the bubbles out |
wipe the rim |
tighten seal and lid |
Now (what I'm currently doing):
submerge and boil for 90 minutes
Remove from water and let sit. Lids should seal within 24 hours. If they do
not,
discard!
Here's to happy canning:)
