Somewhere during the early summer days this year, I came across this recipe in a Betty Crocker cook book. I tried it and fell in love! Seriously, during peach season, this was ALWAYS in my freezer. It's fairly simple and has pretty common ingredients. So, even though peach season is over and snow has already fallen, here's a recipe for peach ice cream.
Betty Crocker’s Fresh Peach Ice Cream
You will need:
2 c. fresh peaches (4-5 peaches)
1 c. sugar, divided
1/4 tsp. salt
1 c. milk
3 egg yolks
1 tsp. vanilla
2 c. whipping cream
Directions:
- Wash & peel peaches, mash with hand masher
- Add 1/2 c. sugar, mix and set aside
- Combine 1/2 c. sugar, salt, 1 c. milk and egg yolks in a saucepan
- Heat over medium heat until edges begin to boil, remove from heat and let cool
- Add peach mixture, vanilla and whipping cream, pour in ice cream maker
- Follow ice cream maker’s directions to churn
Serve with: Fresh Peaches sprinkled on top!
I used peaches from a neighbor's tree for this batch...heavenly. |
